I first laid my eyes on this sweet little dish at a crazy, busy, Italian restaurant we like to frequent. So I tried it at home.
2-3 tomatoes, diced
a few fresh basil leaves, chopped
1-2 cloves of garlic crushed and minced (add a little olive oil when chopping to avoid sticking to the knife)
Salt, to taste
Pepper or chili flakes, to taste
2-3 tbsp. olive oil
1 Avocado, diced
Just prepare the bruschetta as you normally would by mixing the ingredients above and add a diced Avocado, and there you have it – This is a quick and easy recipe that pairs perfectly with my Almond Flour Crackers or Crookies.
