These breakfast treats are packed full of protein and pair perfectly with my morning coffee. This is my oatmeal, raisin cookie replacement (sans oatmeal, of course) and a great way to kick-start the day.
I am dedicating this post to my Son’s Uncle Mark, as it is his birthday tomorrow and I am rolling him up a batch tonight for his New Years Eve birthday brunch tomorrow – these are his faves!

1/2 Cup of Organic nut butter of your choice.
2-4 tbsp. of your favorite paleo sweetener. I prefer Yacon Syrop, as it is the lowest in calories and is the most beneficial.
1/2 cup of unsweetened coconut flakes
1/4 cup finely chopped pitted dates, or raisins.
1/8 cup chia seeds (optional – I use them strictly for the added health benefits)
Chop dates finely.
Mix nut butter and paleo sweetener well, then fork in remaining ingredients and knead until you have a thick batter like consistency. Roll into 1″ balls; you will probably have to test a few and alter ingredient ratios before you get it perfect and refrigerate. Sprinkling them with cinnamon makes them a little more apropos for the festive season.
Depending on the kind of nut butter you use, you may need to alter the ratios of other ingredients. You may have to use more or less of other ingredients to get the right “ball rolling” consistency.
This recipe can be thickened with almond or coconut flour. On the flip side you can add a few drops of water or coconut oil.
Refrigerate the batter for a few hours, roll up those little bundles of love and store them in the refrigerator.
