Those of us with toddlers know that pasta is often a go-to dinner and sadly a staple for many, but this sweet little recipe may take some of the guilt out of all of the empty carbs it is served on 🙂 I love that the ladies at Super Healthy Kids recommend soba noodles made from buckwheat which, despite it’s name, is actually not related to wheat at all. Buckwheat is not even a grain, it is a pseudo-cereal super seed (say that 10 times fast) and not only is it gluten-free, it is very high in manganese and has loads of fiber.

Kudos to anyone who can get their kiddos to eat vegetable noodles – a sauce like this might just do the trick!
